Eggless Fruit Cup Cake


This cake is a sure treat for vegans!

Ingredients:–

1 cup flour

1 cup sugar

1/2 cup vanilla custard powder or cornflour

1 tsp.baking powder

1 tsp.baking soda

a pinch of salt

1/2 cup oil

1/2 cup hot water

1/2 cup cold milk

1 tsp.vanilla essence

2 tblsp.yoghurt

1/2 cup tutti fruity  and 1/4 cup nuts mixed in strawberry jam.(for a rich taste you could  add 4 tblsp.  rum or brandy and soak for a few mins)

1/2 tsp.powdered spices(cinnamon and mace)

Mix all the dry ingredients(bold listed).Mix the wet ingredients and add to the dry ingredients.Make sure there are no lumps.Scoop into individual paper cups and bake in a moderate oven for 30-35 minutes after which it is ready to be served.

PRAWN ROLLS


This  is not very spicy and anyone could savour it!I am not a lover of ready made or store fresh wrappers! So here’s the recipe for homemade wrappers.

Ingredients for wrappers:

1 cup flour

2 eggs

salt to taste

oil for frying

Ingredients for filling:

2 cups cooked prawns (boiled or lightly sauteed in oil)

1/2 cup shredded cabbage

2 spring onions with greens or leeks

salt and pepper to taste

1/2 tsp chillie sauce(optional)

butter or olive oil -1tblsp

Wrappers:Make a thin batter of eggs, flour ,salt and water.Fry thin pancakes on one side. keep a little batter aside.fill the pancakes with the filling on the cooked side,roll up,dip in remaining batter and deep fry till golden.

Filling:heat the butter in a pan,add onions,and saute till light brown.Add all other ingredients and cook over low heat till dry.

Rolls could be served with chilli or tomato sauce.

Variations:Fish,crab meat,and boiled egg can be used instead of prawn.

Cabbage Manchurian Recipe


This is a recipe for the cabbage balls a simple yet delightful side dish(ingredients listed below)

3/4 cup wheat flour

150gm finely chopped cabbage

a small piece ginger (finely chopped)

2 pips garlic(finely chopped)

spring onions -a little or one onion(finely chopped

green chillies-3 finely chopped

1/2 tsp. salt.

oil for frying.

bind all these ingredients into lemon sized balls,adding a little water .fry  in oil and set aside.

For the sauce

2-3 dry chillies

1-2 tsp ginger -garlic chopped finely

1 onion

finely chopped capsicum

1 tsp.chilli sauce

1/2 tsp pepper powder

1-2 tbsp soya sauce

1 tab cornflour mixed in 1 cup water.

1 tsp.sugar or honey

salt to taste

Heat 1 tblsp. of oil in a pan.Add the chopped  ginger & garlic .Add onion and the capsicum and saute for a minute.Add the rest of the spices and sauces and finally add cornflour mixed with water.Add sugar or honey.When the gravy starts to thicken .Add the cabbage balls and remove from fire immediately.Garnish with spring onions/coriander leaves.

Good accompaniment for fried rice and noodles.

The fried cabbage balls tastes good without the gravy too,and could be served as a side dish or starter.

Sri Lankan Coconut Roti with Onion Sambol


This is a Srilankan special that can be made both as breakfast as well as dinner.

Ingredients:

3 cups plain flour

1 coconut scraped (coconut can be cut and ground coarsely with 1 cup water and  used too)

salt to taste

bind all these to a a little sticky dough .make balls out of the dough.grease a plate with coconut oil,flatten with the palm of your hand. and cook on a griddle till cooked on both sides.

Variations

1.  You could add chopped onions,green chillies,and curry leaves when binding the dough,

2.  Spring onions and chilli powder with cummin seeds.

For the onion sambol-small onions-25 nos or big onions -2 nos

chilli flakes-1-2 tblsp

juice of 1 lime

pepper powder-1/2 tsp

garlic-1

curry leaves a few(optional)

sugar -1tblsp

salt to taste.

Grinding this in a pestle and mortar way will be excellent..or blend coarsely in a blender quickly,otherwise it will become watery.

You will never stop making this dish again and again once you experience the taste!!

Stuffed Grilled Fish


Ingredients:

500 gm mackeral fish (head removed,slit half and deboned

Thick tamarind extact-2 tblsp.

honey -1 tblsp.

chillie flakes 2 tblsp.

pepper powder-1/2 tblsp.

salt to taste.

4 pips garlic

cummin powder-1/2 tblsp.

finely chopped onion -1 big

green chillies  finely chopped

gramflour for coating

Grind  all spices,except onion and green chillies to a fine paste.

Apply all over the fish,inside should be well coated.Mix onions and green chillies .

Stuff and press the edges tight (if you want you can use the tooth picks .coat with plain gram flour (powdery form,no water )and grill on medium heat till golden brown.

BAKED CHICKEN SANDWICH DELIGHT


shredded chicken -2 cups chicken stock-1 cup                74143

capsicums- 2 chopped

carrots-2 chopped

spring onions-4-5 chopped with greens

peanuts or nuts of your choice-1 tbsp.

grated cheese-1/4 cup

1 tsp.worcester sauce

1/4 tsp.pepper powder

chilli powder-1/4 tsp.(or to your taste)

salt to taste

butter/ghee-1 tbsp.

bread  slices

blanch tomatoes in hot water,skin and puree.add the stock and cook till thick.heat butter and saute the vegetables and chicken.add the thickened tomatoes,add the rest of the ingredients except peanuts and cheese and simmer till thick.lastly add peanuts.apply chicken mixture on the bread.sprinkle grated cheese,and bake in a hot oven for 5-10 mins till golden brown.

note:this sandwich could be grilled too.

EASY QUICK DOUGHNUTS


This quick doughnut can be fried and stored,for a few days.can be served plain,coated with sugar,cream custard  chocolate or any of ur choice.                                                                                                                                                                                                 plain-doughnuts-vijis-food-recipes

ingredients:sugar -1 cup

butter- 4 tbsp.

eggs-2

flour-4 cups

baking powder-1tbsp.

salt- 1 tsp

mace-1/2 tsp.(powder)

milk- 3/4 cup

oil for frying

Beat the eggs well.and mix the rest of the ingredients except the oil and set aside for 10 mins(could be made immediately too)

cut into doughnut shapes,and fry on low heat.

SCOTCH EGGS CURRY


Ingredients for the scotch eggs 

Hard boiled eggs-6

Bread -4-5 slices

Milk to bind

Green chillies-2 finely chopped

Jeera powder-1/2 tsp

Coriander leaves/palak leaves finely chopped.

Breadcrumbs to coat the eggs

Oil for frying.

1/4 cup flour mixed with a little water to dip the eggs before coating with crumbs

Cut the boiled eggs into halves and remove the egg yolks separately.Bind all other ingredients except

the breadcrumbs and flour,and fill in the boiled white egg .(you could fill only one side, or cover the

whole egg to make a big ball…your choice).Dip in the flour batter,coat with breadcrumbs.Deep fry in

oil to a golden brown color and set aside.

For the gravy:

Onion-2 big chopped fine

Tomatoes-4-5 pureed

Ginger garlic paste-1 tbsp.

1 capsicum or two green chillies

1 tsp.chilli powder

1 tsp.coriander powder

1 tsp cummin seed powder

garam masala -1/2 tsp.

Cream /or thick coconut milk-1/2 cup

Coriander leaves for garnishing

1 tsp honey

Salt to taste

Take a tbsp.of oil from the fried oil.and add onions and saute till brown.add ginger garlic paste,and the

pureed tomatoes .add salt and cook till oil separates,then add the rest of the ingredients except the

cream,and further cook for 5 mins.add cream/coconut milk.adjust the gravy to your requirement.add

the eggs and simmer for 5 mins add coriander leaves to garnish

Suggestions:Kasuri methi leaves could be added for the garnish.

Honey could be substituted for jaggery/sugar.

Good dish accompanied with white pulaos or coconut rice.

brocolli and chicken wonton soup


For the filling:              images

brocolli-75gm

pepper

1 egg(optional)

salt to taste

For the wonton wraps

1egg

1 cup white flour.

For the soup

water /or chicken stock/or any stock you like-4-5 cups

2-3 green chillies chopped

small piece ginger chopped.

coriander leaves

1 tbsp soya sauce or oyster sauce

onions-1 large chopped.

For the filling:Boil the brocolli and chicken for 5 mins.blend coarsely.combine all the ingredients together in a pan and cook on a low heat till dry and scrambled.(keep stirring)

For the wraps:Bind to a smooth dough .set aside for few mins .roll out thinly.stuff with filling .and make the dumplings.

For the soup:Put in all the ingredients for soup in a pan,when it starts to boil add wontons one by one till the dumplings cook.

garnish with coriander leaves.

This soup is a mild and healthy soup,with no oil .

variations for filling:mutton mince,egg and fine cabbage.prawn,crab,fish…and many more

vegetarian variation:paneer crumbled with spinach,cabbage and carrot ,spinach n carrot,leeks and grated pumpkin,and many more.

Chicken N Cashew Ball Korma


chicken kofta curry

Chicken n cashew balls curry

500 gm chicken mince

100-150gm cashew coarsely ground

Salt to taste

One green chillie.

For the gravy:

Chopped onions-1

Coarsely ground onion -1

Green chillies -2(ground)

Red chillies-5(ground)

Ginger garlic paste -1 tbsp.

Curd -1/4 cup

Tomatoes -1 big

Coconut -1/4 ground to a paste

Aniseeds -1/4 tsp.

Whole garam masala -1 tsp.

Lime juice -1 tbsp

Mint and coriander leaves

Ghee or butter

1 cup water

To make the balls:mix all the ingredients and form into balls.

Heat ghee in a flat bottomed pan.add whole garam masala,aniseeds,and chopped onions and fry till golden brown.then add the ground onions,next the ground chillies,and tomatoes and sauté till tomato softens.add the coconut paste .and sauté for 5 mins.then add curd and the rest of the ingredients.add  the water and when it starts to boil,add the chiken balls.don’t stir allow the chicken balls to settle and simmer till the gravy thickens.

Good accompaniment for pulaos and rotis or bread.

Balls could be fried and added too.
