TOMATO CHEESE PIE (makes two medium sized pies)


For the  pie crust:

200 gm flour

75 gm butter

50-75 gm cheese grated

1 egg yolk

1/2 tsp.mustard seeds powdered

1/2 tsp.pepper

salt to taste

Add all the seasoning to the flour.Cut butter into cubes and blend well into the flour .Add the rest of the ingredients.Add a little cold water if necessary.Roll out and line a pie dish.Prick the dough at he bottom with the fork.and bake in a moderate oven(180 degrees) for 20 minutes.

Filling

8-10 tomatoes

2-3 eggs

1 cup milk

100 gm mozarella cheese or any other cheese

4-5 onions chopped fine

50 gm butter

2-3 tblsp.of plain flour

1/2 tsp.pepper powder

3-4 tsp of pickled green chillies.

salt to taste

fresh/dried basil leaves fo sprinkling on the top

Firstly fry the onions till brown and keep aside.

Pour hot water on the tomatoes and leave for 5-10 minutes,slice them and keep aside.

Heat butter. add flour and cook for a minute taking care not to brown or burn it.Add  the milk,and a half of the cheese with pepper .Remove from fire when you see it thickening .This will thicken very quick.

To assemble the pie

Layer the pie starting with sliced tomatoes, then the cheese sauce ,then the sliced tomatoes and pickled chillies.Repeat .Beat the eggs and pour over and top with grated cheese.

Return to oven and bake for another 20-25 minutes.
