Ingredients
200 gms butter
250 gms brown sugar
4 eggs
250 gms flour
2 tsp.baking powder
2 cups chocolate pieces
1/2 cup chopped glace cherries
1/2 cup mixed peel.
1 cup chopped walnuts
1/2 cup almonds
1 cup seedless raisins
1/4 cup rum/brandy
1/2 cup milk
2 tsp.vanilla
a pinch of salt.
pinch of grated nutmeg
1/4 tsp.mixed spice powder/cinnamon powder-1/4 tsp.
Soak all the chopped fruit and spices in rum,two days before making the cake.
Melt chocolate over warm water.
Beat butter and sugar till light and creamy,add one eggs at a time and beat well.Add melted chocolate and vanilla.Fold in the sifted flour(with baking powder and salt).Add milk and nuts and mix well.Pour into a lined and greased tin.Bake in 150 degrees preheated oven for 2 hours.Insert a skewer and if it comes out clean its done.Remove from tin,after its cool.sprinkle rum over the cake.Wrap in butter paper or foil and slice fter a day or two.
:When baking any cake ,always remember to allow the cake to stand in the oven for 5 -10 mins after you switch off the oven,and then remove the cake.Do not remove immediately,as some cakes do drop in the centre if you remove immediately.
