Plum cake is mostly a delight during Christmas time,and the fruits used are lesser than the traditional Rich Christmas cake.So now for the recipe

150 gm butter

100 gm granulated sugar

2 eggs

100 gm flour

300 gm mixed dry fruits

30 ml rum/brandy

5 gm mixed spice(1 tsp.)

1/4 tsp.baking soda

Soak dry fruits with the spices in rum at least one week before making the cake.

Cream the butter and sugar together till fluffy.Add the eggs ,alternatively to avoid curdling.

Add the soaked fruits to the flour and mix evenly.Fold into the butter mixture.Pour into greased and lined mould and bake in a very  low heat oven for 45 minutes(160 degrees) or till a skewer inserted comes out clean.

Note :For those who want to do a quickie:cook the fruits for a minute,and add to mixture with the rum.

For a richer taste you could add a tblsp.of prune jam or blackcurrant jam.
