This is an authentic south Indian recipe.
When the word kesari flashes in your mind it’s sweet with nuts at each bite.The taste of pure ghee in it,and the shimmer of ghee shown, drags anyone to it.
This recipe has minimal amount of sugar, and jaggery replaced for the sweetness.
Easy to make and a quickie too.

2 cups rawa(semolina)
1 cup jaggery (vellam)
1/4 cup sugar.
3/4 top.elaichi powder
1/4 tsp.salt
1/4 top nutmeg powder(optional)
4 cups water
1/2 cup ghee+2 tblsp oil.
Cashewnuts and raisins
Heat a tblsp of ghee, and first lightly fry the Cashewnuts and raisins and set aside.
In the same pan add the rest of the ghee and the oil (reserve a little to glaze on top).Roast the rawa lightly.
Simultaneously heat the water and jaggery together.
Pour this hot syrup on the rawa,with salt.Mix well.Cover and simmer for 10 minutes,till the semolina swells.
Add the rest of the ingredients and cook, stirring all the while.The sugar will again make the mixture watery. Keep stirring till it binds together.
For a richer taste you could add extra ghee,or only for the glaze.
