This is a wonderful,crunchy,unique tasty flat
bread , from the Sri Lankan cuisine . Crunchy
outside and soft inside.All bakeries of Sri Lanka
have this bread everyday. This particular bread
has a distinct flavour and aroma.Addictive to
crunch on and on.
Just a dip into any lovely curry , dal, or the
famous ‘pol sambol’ it’s no doubt a divine meal.
My favourite bread tops the list .These breads
are baked in two sizes , the smaller loaves and
bigger loaves .The shapes are different from
other breads,and the oil used in the dough is
coconut oil which contributes to the flavour.
The method of baking is different from other
breads.Before the bake ,the dough has to be
layered with a paste,baked,then removed from
layers ,and baked again crisp and brown on
both sides .Not much kneading is required.
Today I made a few loaves for dinner and my
kids loved it very much !
Do try this awesome bread and enjoy the
4 cups all purpose flour
1.5 tsp instant yeast
1 tbsp sugar ( I used brown , you can use white)
1 tsp salt
2-3 tbsp coconut oil
Paste for layering
1 tbsp butter
2 tbsp flour ( maida / all purpose flour)
2-3 tbsp coconut oil
If you are using rapid / instant yeast ,add
directly to the flour.
Dry yeast has to be activated and then added.
Mix all the ingredients to a firm and soft dough,
Lightly knead and allow to prove till risen or 30
minutes. Grease the bowl with oil,before you
rest the dough in it.
After the first rise ,knead again lightly and
divide into portions .Allow the second rise ( 20
Now make flat shapes ( like in the pic ) .
Each flattened bread has to be smeared with
the paste,and layered in a bread pan .If there’s
is space in the bread pan .Fill it with a thick foil
to avoid expansion, and retain shape.
Cover for 10-15 minutes .and bake in a 200 C
oven for 20 minutes ,change the temperature to
175 or 180 C for another 15 minutes.
Remove from oven ,and remove the layers ,
and arrange each bread ( the non crispier side
up) and bake again for another 15 minutes .
Flip the bread again to the other side and bake
again for another 10-15 minutes .
Remove from oven .
