4 GUACAMOLE VARIATIONS


Guacamole  sourced  from the Mexican cuisine,

is widely used all around the world as dips,and

in varieties of foods.

The  ripe avacado or butterfruit is the key

ingredient in this dish.

The authentic Guacamole is made with cilantro

(coriander leaves) but spinach/palak,

basil leaves is also used in the making .

As avacado is the dominating ingredient the

use of your favourite pick in leaves does not

change the taste.

I have tried with gotukola (brahmi ) leaves and

it was fine.

Today i will be sharing, few of the variations.

I have added egg in different ways along with this.

Believe me ,its soo…amazing it is off my table within seconds.

So try this recipies with this healthy and amazing fruit.

For the basic guacomole 

1 -2 ripe avacado/butterfruit

1 cup chopped cilantro/palak

1 onion chopped fine

2-3 green chillies

2 tomatoes chopped

pepper powder (depending on your taste)

salt

juice of 2 limes

a little nutmeg powder (optional)

Method

Remove the pulp and mash lightly.Add the rest of the ingredients and mix well.


For the variations.

1. Steamed/baked egg and guacomole bun

Beat 4-5 eggs ,2 tblsp milk ,pepper,salt,a

teaspoon of flour together and steam or bake

till done,

4-5 buns (any buns of your choice) buttered

lightly

Stuff with the salad and pieces of steamed or

baked egg.

You could use poached eggs too for another

day.


 

2. Double decker sandwich

One side with the salad and the other with egg

slices .


 

3.Chappathi wrap

Beat some eggs and smear on the chappathi

while making.Add the salad and wrap.

Tortilla ,Pita wraps could be used.


 

4. You could use for BRUSSHETA (Toasted bread)

BUTTERMILK BREAD


This bread was soft and tasty , mixed in a

different way . This lockdown has unlocked all

bread baking techniques in many,and made

many to attempt making bread at home .

Negativity turned positive!Even I frequently

make bread at home ,trying all methods and

varieties.Beetroot wine bread,Whey bread,….,

and today it’s buttermilk bread with white

flour .It turned out good and tasted cheesy .

Made a paneer loaf with the remaining

stuffing I used for stuffed capsicum.That was

yummy too!

Now to the recipe

INGREDIENTS

3-4 cups flour

2 tsp yeast

1 tbsp sugar

1 cup buttermilk

1/2 cup milk

2 tsp salt

3 tbsp melted ghee/butter

3 tbsp flour

1 whole egg + egg yolk

METHOD

Warm the milk ,and add 3 tbsp flour,sugar and

the yeast,

Mix the flour,salt and the rest of the ingredient,

except ghee and knead to a soft dough

( photo:punched down after the first rise)

Add ghee/ butter and knead again .

Do not get confused if the dough is sticky .

Allow to rise for 20-30 minutes . ( as buttermilk

is used it will double quick)

Knead lightly again and transfer into greased

loaf tins .Let it rise in the tin for another 15

minutes.

Bake in a preheated oven 200C for 25-30

minutes.

SEMOLINA EGG BUNS


Made semolina buns for breakfast today.I made

a few doughnuts from the same dough,injected

with my innovated beetroot-cherry jam and

both turned out to be successful.

A point to be noted : I made the dough with

whey water.

Breakfast was loved !

The buns with semolina ,was positively good!

It was soft,and the taste was no lesser to the

flour buns.I used fine semolina( chiroti rawa).

If you have the normal semolina ,just powder it

lightly and then make the dough .

To the recipe …

INGREDIENTS

4-5 cups fine semolina ( rawa)

2 tsp instant yeast

2 tbsp honey /sugar

Whey water / water

2 tbsp milk powder

2 tsp salt

Oil / butter

A pinch of baking soda ( optional)

METHOD

Add semolina ,milk powder,baking soda yeast

and mix without adding any liquid first.

Next add honey and enough whey water with

salt to hold to a dough.Add 2-3 tbsp oil or butter

and knead for few minutes ,and allow to rise.(25-30 minutes)

Only two times proving or rising is required.

After the first rise , knead again and wait for

the second rise ( 20-30 minutes ).

Next divide into portions ,roll and make buns

with filling .

After making shapes allow it to rise for another

10 minutes only .Brush tops with egg yolk/ milk

and bake in a preheated oven 200C for 20

minutes!

Brush with butter if you like !


For the doughnuts

Dough

Oil for frying

Powdered sugar

Jam

Divide tiny ball shaped and set aside . Cover

and set aside for 5-10 minutes .

Drops these balls in oil on medium flame ,and

fry till golden brown.

Use a nozzle with jam in a piping bag ,and

inject jam into the fried doughnuts.

Sprinkle a little powdered sugar .

PINEAPPLE CUSTARD BUNS


In fact,i wanted to make baked custard cream

donuts, but I had to make it like a tart,as the

dough was not sufficient . You could try making

fried or baked doughnuts.

To the recipe

INGREDIENTS

3 cups milk

2-3 tbsp custard powder ( vanilla) mixed with a little milk

Sugar to taste

Stewed pineapple or fresh chopped pineapple

pieces.

Heat milk with sugar .

METHOD

Once it starts to boil,add the custard powder

mixture , and the pineapple .

Remove when it is thick and use as filling.

Note . If you are making it like a tart like I did . Sprinkle some brown sugar on the custard , and bake .

BASIL AND CHEESE BUNS


The dough recipe is the same as for the pizza.

This is the easiest, and the tastiest bun . Good

for working moms and busy moms.The dough

can be made and kept in the fridge one day

prior to baking.

To the making

Roll out circles of the dough . Cut strips on one

side . Add the filling with cheese gratings.Cover

the circle halfway and overlap with cut strips.

Brush the tops with milk and chilli paste .

Bake in a 200C oven for 20 minutes.

Serve hot


Variation

You can make a coarse pesto with basil leaves

garlic and tomato .

Use as filling with cheese.

PANEER PIZZA WITH BASIL SAUCE


This recipe will be connected to another 2

recipes, as the dough is the same for all three

This dough was just a random dump of

ingredients, but it turned out to be the softest.

It’s doesn’t need much kneading,just proving

the dough only twice.

The sauces were my innovation,and the

outcome was awesome!

INGREDIENTS

For the dough

3 cups wheat flour

1.5 cups all purpose flour

2 tbsp milk powder

2 tbsp curd

1 heaped tsp.instant yeast

1 tbsp sugar ( preferably brown)

1 tsp salt.

2-3 tbsp ghee/ butter

METHOD

Put the flours,milk powder,yeast sugar and mix

well.

Next add the rest of the ingredients (except

ghee) and knead to a firm dough .

Now add the ghee and knead for 10 minutes.

Cover and allow to rise double.

After you see it doubled,punch down the air

and knead for 5 minutes and allow the second

rise.

Divide into portions,roll and make pizza.

The main additions to the pizza

1. Paneer mix 2.Basil sauce 3 .Onion sauce


For the paneer

200 gm cottage cheese or paneer

1 -2 tomatoes sliced

1 tbsp chilli paste

Mix all these together and set aside.


For the basil sauce

1 cup basil leaves

10-15 cashewnuts

A small blob of butter

A pinch of pepper and salt to taste

Grind the basil and cashewnuts together with

little water to a paste.

Heat the butter in a pan, add the ground paste.

It will start to thicken . Remove from fire and

set aside .


Onion sauce

2-3 big onions chopped fine

1/2 cup milk

Salt to taste

a pinch of nutmeg powder

Heat all this together till you see the onions

turning colour or translucent .Remove from

fire and set aside.

Option : You can sauté the onions in a little butter till light brown ,and add to the milk too.


For the final assembly

Your favourite tomato sauce/ ketchup /concasse

to spread on the pizza .

Cheese gratings (I used Gouda cheese ). You can

use any cheese..

Roll out the pizza .

Drizzle tomato sauce all over the dough.

Add the onion sauce.

Next the paneer mixture .

Next drizzle the basil sauce .

Lastly add the cheese gratings.

Bake in a hot oven ( 200C )for 20 minutes .

Serve hot .

SOFT MILK BREAD WITH ROUX


This is a lovely bread ,very,very soft . The

texture is super awesome .

I made the roux ( flour cooked with water) the

previous night .

Mixed the flour in the morning,the dough

proved quick,due to the wild summer .

Breakfast was loved by all !

I want to specify that I used ghee not butter .

Trial turned successful!

Flour measurements may vary in each one’s

method of kneading.Next time I will post the

dough photos . Morning hours I want to finish

everything fast,so failed to take photos of the

dough .

Moving on to the recipe

INGREDIENTS

4 cups all purpose flour

2 tsp instant yeast

2 tblsp milk powder

1/2 cup milk

1 tsp salt

2-3 tblsp ghee

1 egg ( optional)

1 cup roux*

METHOD

Mix all together except the ghee and knead well

till the dough doesn’t snap when you pull.

Add ghee and knead again for 5 minutes.

Cover and allow to prove double.

Punch down the air in the dough and divide

into portions .Make into any shapes you prefer

and place in a bread baking tin.

Cover and allow to prove in the tin for the 2nd

time.

Egg wash the tops and bake in a preheated

200C oven for 20-25 minutes.

For the roux ( rough measurements)

2 cups water

1/4 cup all purpose flour

A pinch of salt

Heat water and add the flour and cook till it is

thick . (2-3 minutes). Allow to cool thoroughly

and use.

BURGER BUN WITH RAJMA PATTY


This recipe was done from scratch . Baked the

bun the previous night and made this for

breakfast .Protein packed, with the ingredients

I had at home prepared a lovely breakfast!

It was a double decker, one was the patty with

chillie and tomato sauce ,and the other was

avacado ,tomato ..,,,,rest to the recipe now

INGREDIENTS

For the bun

2-3 cups flour

1 heaped tsp yeast

1 egg

2 tblsp milk powder / warm milk

1 tblsp sugar

1 tsp salt

3 tblsp butter

Warm water to bind the dough +prove yeast

Egg yolk mixed with 1 tsp milk ( for pre-bake

wash)

Few sesame seeds

METHOD

Add the yeast,sugar, 1/2 cup warm water,and a

handful of flour . Mix and allow to prove till

foamy.

Next mix in the rest of the ingredients and

knead to a soft dough ( not sticky).

Allow to rise double in size.

Divide into portions ( roughly 5-6).

Make shapes and place on a greased tray.

Allow to rise for 10-15 minutes , brush the tops

with milk and egg.

Sprinkle sesame seeds and bake in a 200C with

oven for 20-25 minutes.

Allow to cool and cut two layers.

You can smear the sides of the bread of the

bread with cheese or butter .

Bun could be toasted with butter before

assembling

For the patty

INGREDIENTS

1 cup soaked rajma / kidney beans

7-8 dry red chillies

1 tblsp coriander -cummin mixed powder

3-4 cloves of garlic

Few basil leaves ( optional)

1/4 cup breadcrumbs

Salt to taste

1 tblsp lime juice

1/4 tsp mixed spice powder/ garam masala

Butter/ oil for frying

METHOD

Wash the pre-soaked beans and grind in a

mixer with the garlic,chillies, to a coarse paste

Add the rest of the ingredients and bind to

make patties.

Grill with butter or oil till golden brown. I used

my pancake griddle to get uniform shapes.

Set aside.

To Garnish

Onions

Cut one onion into rings and mix in a little

lime and salt and set aside

Tomato

Cut slices and sprinkle light pepper

Avocado

Scoop out flesh from the avacado and add cut .

Some cilantro or parsley or if you are lucky to

get salad or lettuce.

Tomato and chillie sauce

If you have only tomato sauce you could mix a

little chilli powder to it and use.

Another option – You could mix ginger pickle

and tomato sauce.

Adding vegetables is your option- cucumber ,

gherkins,zucchini,boiled/ steamed broccoli…..

To assemble

You could toast the bread with butter before

you start.This gives added flavour.

Smear the tomato sauce on the bottom layer

and place the patty

Next layer you could smear with cheese or add

cheese slice and the prepared vegetables.

You could add egg if you prefer while serving .

I cut skewers and secured the bun .I think

skewers are safer then toothpicks when you

serve kids.

If you are not using avocado, you can make

sauces like cheese,hollandaise,or home made

Mayonnaise….!

STEAMED RED BEAN PASTE BUNS


This is purely made with wheat flour, and

wheat rawa.

The filling is sweet, with a little chilli paste .If

chilli chocolate, can be made why not a sweet

paste added with chilli paste? 🤪.

So the dough is my hand measurements only,

and the paste was my innovation. I made this

for breakfast.Wholesome,high protein packed

meal.

Let’s get to the recipe now..

INGREDIENTS

For the dough

3 cups wheat flour

3/4 cup rawa/ semolina( I used wheat rawa)

2 tsp instant yeast

1 tblsp sugar ( I used brown)

1/4 cup warm milk

2 tblsp oil / butter

1 tsp salt

Lukewarm water for dough

METHOD

As I’m using instant yeast , I mix all together in

my stand mixer . Those who are using active

dry yeast can, first do the fermentation,

(with sugar and lukewarm water),and then mix

in to the flour.

Allow to prove double . Divide into portions.

Keep spoonfuls of the filling , and steam for

10-15 minutes.

Brush the tops with a little milk and steam.

For the filling

1 cup rajma ( red kidney beans) soaked

overnight

Jaggery powder to your taste

1-2 tsp.chilli paste

Salt to taste

Elaichi powder

Grated coconut ( 1/2 cup)

Method

Cook the rajma in a pressure cooker for 6

whistles and drain out the water.

Mash it lightly with the rest of the ingredients,

and use it as a filling .

BEETROOT WINE BUNS


This is the recipe of ‘Kimbula banis’ meaning

crocodile buns as it resembles a crocodile in

shape.(Kimbula means crocodile in Sinhala)

This bun is available, in all bakeries of Srilanka

It is crisp on the outside, with a good sprinkle

of sugar on the top , and soft on the inside.

I had made beetroot wine before,and thought

to include this in the preparation!

Trust me the wine , made the dough so

velvety ,it looked smooth as silk . ( I forgot to

take photo of the dough).

Added some pumpkin seeds only for sprinkle .

( you can add seeds and nuts of your choice).

To the recipe now

INGREDIENTS

3-4 cups flour

2 tsp instant yeast

1/2 cup sugar

1/2 cup milk

50 gm butter/ oil

1/4 -1/2 cup beetroot wine

1/2 tsp salt

METHOD

Mix all the ingredients together and knead for

10- 15 minutes in your mixer, or by hand.

Cover and allow to rise double in size.

After the dough has risen . Divide into portions.

Roll out,cut into triangles and roll out like a

croissant , but a little longer,

Place each on a greased tray,apply sugar syrup

and sprinkle some sugar and nuts( your choice)

Bake in a 200C oven for 20-25 minutes!

For the sugar syrup

1/4 cup sugar with a little water ( no need to

heat) just mix till sugar is slightly dissolved .

Note: You can opt out the wine and make the

authentic sugary buns.

SPINACH ‘N’ TAHINI BUNS


The glisten of the spinach leaves in my culinary

patch attracted me to make this for breakfast

today .

In regular , I make it a point to plan breakfast

for the next day, as I don’t like to rise with

confusions of what to make the next day .

As planned it was cinnamon buns for the

morning .The habit of watering my plants early

in the morning diverted the plans from sweet

to savoury.As it was Sunday, and that too a

lockdown Sunday I didn’t mind the change.

Anyway…let’s get into the recipe now .

INGREDIENTS

3 cups wheat flour

1 cup fine semolina ( rawa)

2 tsp.yeast

1 cup spinach leaves ( ground)

1 tblsp.curd

1/4 cup oil / 50 gm butter

Enough lukewarm water to bind .

1 tsp salt

METHOD

Mix all together with lukewarm water, and set

aside for 30 minutes.

Once it is double in size ,roll into one big circle,

spread the tahini paste on one side and roll to

make a single roll. Cut into portions,press

lightly , and place on a greased tray .

Brush the tops with egg yolk,and bake in 200C

oven for 25-30 minutes.

TAHINI PASTE

1 cup sesame seeds ( toasted)

2-3 tblsp olive oil

2 tblsp chilli flakes

1 tsp lime juice

Salt to taste

Grind the sesame seeds, oil,and salt to a paste .

Add chilli flakes and lime juice.

Apply the mixed paste on one side of the dough

This recipe is another innovation of mine , so

WHEAT FLOUR BREAD


This bread is made with wheat flour and a

handful of all purpose flour .

If you are using rapid yeast, not much of

kneading is required .Soft,fragrant wheat bread

is always baked in my home , and I do not buy

bread.

To the recipe now

INGREDIENTS

3 cups wheat flour

2 tsp yeast

1 tblsp.sugar ( preferably brown)

2 tblsp milk powder/ milk

1 egg ( optional)

50gm butter

Lukewarm water to bind the dough

METHOD

You can mix all the ingredients together and

bind to a sticky dough.

Allow to rise,knead for 10 minutes on a floured

board (count to 50 turns of dough for best

results).

If you have a Kitchen Aid it will do the trick.

Separate into 2 loaves and drop into greased

loaf pans (I used coconut oil ).

Let it rise for another time .

Brush the tops with egg yolk , and bake in a

200C oven for 20 -30 minutes .

Remove from pan and allow to cool .Cut into

slices.

Note: You could include flax seed powder to the dough or add flax seeds for that extra crunch

DINNER ROLLS


Dinner rolls with a white sauce garlicky smear!

When it comes to bread or pizza dough , I don’t

follow recipe,it’s the amount my eye ,mind,and

hand actions direct me !😃

So,it’s like winding my brain to write the

recipe .

This was a more than quick dinner . All done

within 45 minutes.Thanks to my mixer. The

result was ”super soft”.

This time I tried adding a little curd ,but it

didn’t seem to give vast changes.

Anyway ,to the recipe now .

INGREDIENTS( 8-9 portions)

4-5 cups flour

Lukewarm water (1 cup)

Lukewarm milk(1/2 cup)

2 tsp yeast

2 tsp sugar

2 tblsp curd

1/4 cup olive oil

1 tsp salt.

METHOD

Add a little lukewarm water into the mixing

bowl,and add sugar and yeast.Sprinkle 2-3

tblsp of flour ,cover and allow to ferment .

Once you see the bubbles,add the rest of the

ingredients except oil and knead well.

Next ,add olive oil and knead well (when you

pull the flour with your hands it should not

snap)

Even if the flour is sticky do not add more flour

(You can adjust after the dough rises)

Cover and allow to rise double ( in a warm

place)

After the rise ,just add some flour onto a

kneading board , divide into portions .

Makes shapes of your choice,and allow to rise

in the baking tray.

Brush the tops with egg yolks and bake in a hot

200C oven for 20- 25 minutes.

For the garlic smear

25 gm butter

1 tsp flour

4-5 tblsp milk

1 green chilli /chilli flakes(I used pickledgreen

chillies)

1 tsp finely chopped garlic

Salt to taste

You can add herbs ( thyme ,parsley)if you like

Method

Heat butter , add garlic and flour , and the milk

till it lightly thick .

Smear this on the hot bread and serve.

You can add cheese for a variation

CHEESE ‘N’SPINACH WHEAT FLOUR BUNS


Buns for a meal is comfort food .Less hassle in

serving and eating it too….. I used cream

cheese and cheddar cheese ( unprocessed),but

if you want more richer flowing cheese ,do use

Mozzarella cheese.

The filling is only a mix in a bowl,so it’s easy

and quick to make .

One healthy point I would like to highlight :

Please do not use processed cheese.

INGREDIENTS

4 cups wheat flour

1/2 cup all purpose flour ( optional)

2 tsp rapid rise yeast / dry yeast

1/2 cup lukewarm water

2 tsp sugar

1 egg

2-3 tblsp olive oil

1 tsp salt.

METHOD

First mix yeast ,sugar and warm water together

Once you see it has risen to a bubbly mix,only

then mix in the ingredients,except oil .

Mix well to bind to a soft sticky dough ( use

warm water to bind).

Now add the olive oil ,and knead for (10

minutes in mixer,15-20 minutes if you are

mixing by hand). Cover and set aside to rise

double.

After the rise,punch the dough down,and

lightly knead for 5 minutes .Cover and start

making the filling.

For the filling

Any cheese you like.

A bunch of Palak/spinach leaves cut.

2 green chillies chopped fine ( I used pickled

green chillies )

A little grated nutmeg

Pepper and salt to your taste.

1/2 tsp cummin seed powder. ( optional)

Method

Mix all the ingredients together and use as

filling.

Divide portions of the dough.Roll lightly and

keep filling and make your desired shape and

style.

Brush the tops with beaten egg yolk

Bake at 200C for 20 minutes!
