CARAMELISED APPLE UPSIDE DOWN CAKE


This is an amazing dessert you should definitely try !The soft caramelised apples,is really

divine.

You can serve with ice-cream,or cream.It was excellent served plain.To serve with ice-

cream or cream is your choice.

You can use any type of apples for this recipe.I have used the Granny Smith apples ..

So ..let’s dive in to the recipe now…

INGREDIENTS

2 apples cored,peeled , sliced or quartered

1 tsp cinnamon powder

3/4 cup brown sugar

1 tblsp butter

1 cup castor sugar / brown sugar

2 egg whites

2 egg yolks

1/4 cup milk mixed with 1 tsp vinegar,or yoghurt

1/2 tsp grated lemon zest

1 tsp vanilla essence

1 heaped cup flour (120 gm)

1/2 tsp.baking powder

METHOD

Caramelise the (3/4 cup) sugar by heating without water,in the pan you are going to make the

cake.

Heat on a low flame till it is of a nice golden color and sugar dissolved.Add butter and mix

carefully.Switch off the flame ,and arrange the apple slices with the cinnamon and lemon zest

sprinkled on top.

Now cook again till the apples are partially soft on a low flame.Remove from fire and set

aside.

For the cake

Beat the egg whites stiff and add 1 cup sugar gradually and beat.Alternatively add the egg

yolks and beat well till creamy.Add essence

Fold in the flour with the baking powder.

Pour over stewed apples and bake in a moderate oven for 30-35 minutes

You can add raisins and nuts in the cake if you like.Well…I added raisins.

Tip – Stem ginger or dried ginger chips can be added with raisins

Orange peel and ginger can be added to the cake

A mix of dried fruits and nuts .

CARAMEL ‘N’CHOCOLATE NO BAKE CHEESECAKE


Caramel and chocolate is a ‘wow’ combination in desserts.Whether it is a cake,pudding,

or ice-cream or any sweet,this combination is to drool for.Hope you all agree with me …

Anyway,let me get into the recipe now .The crust is the basic digestive biscuit crust.You can

opt for mixed nuts crust,or any biscuits of your choice.This cheesecake is caramel

based ,made with brown sugar.The topping is a gelatine based chocolate.

INGREDIENTS

For the crust

1 cup digestive biscuits

25 gm butter

2 tblsp.sugar (brown or white)

Mix all the ingredients in a processor,and press on a spring form pan or pie dish evenly.Cover

and put into the fridge till you prepare the filling.

Option -You can bake this crust for 15 minutes,if you like.

For the filling

200gm cream cheese or cottage cheese (room temperature)

100 gm brown sugar

1 sachet gelatine (4 tsps)

1/4 cup water

1/2 cup thick warm milk

1/2 tsp vanilla/ caramel essence

1 cup cream ( lightly whipped)

3 egg yolks

3 egg whites

Method

Soak the gelatine in 1/4 cup water .Allow it to bloom.

Beat egg yolks and the sugar,and milk and cook on a low flame till slightly thick.

Melt the gelatine over a cup of boiling water,and pour the gelatine into the egg yolk

mixture,and heat till gelatine melts on a low flame.

Beat the cream cheese till it’s creamy .

Mix in the whipped cream,and the egg yolk mixture.

Beat egg whites stiff and to cream cheese mixture.

Pour into prepared crust and chill in fridge till set

For the topping

100 gm dark /milk chocolate

2 tsp gelatine

1/4 cup hot water

1/4 cup cream

Heat cream and chocolate in a Bain Marie (double boiler).

Mix gelatine in hot water till no granules are seen.

Mix into the chocolate mix,and mix well.

When well blended pour over set cheese cake and chill.

Decorate with nuts or chocolate.

Note: Always cover the cheesecake pan bottom with a cling film or foil to avoid liquid seeping out.

BAKED APRICOT CHEESECAKE PIE


Apricots is a good source of Vitamin A,and a treasure for antioxidants.Rich in fibre,good for

your heart,bones and eyes.As it has essential heart health nutrients,it is considered as a

superfood.I have used dry apricots in this recipe.You can used fresh apricots and stew ,or

use canned apricots too.

Let’s get into the recipe now..

INGREDIENTS

For the crust / base

1+1/4 cup flour

75 gm butter

1/4 cup sugar

1/2 cup ground almond flour.

1 egg yolk

a pinch of salt

1/4 cup apricot purée (5-6 apricots boiled with a little sugar or honey and puréed)/jam

Method

Knead or process all the ingredients together to just hold as a dough together,and don’t knead

too much.If it is too dry add 1-2 tblsp of ice water .Wrap it in polythene or foil and keep in the

fridge for minimum 15 minutes.Roll out onto the greased pie dish,or just press on using the

back of a glass or a spatula neat and even .Prick the base with a fork and bake for 10 minutes

(180 degrees).

For the filling

250gm cream cheese /home made paneer

2 eggs

1 egg yolk

1 tblsp.cornflour

3/4 cup sugar

1 cup chopped apricots

1/4 cup apricot purée (5-6 apricots boiled with a little sugar or honey and puréed) or apricot

jam

Method

Beat the cheese till soft.Add sugar and eggs and beat well.Add cornflour and beat again for a

few seconds .

Spread the jam on the baked pie crust and pour the beaten batter.Add the chopped apricots

and bake in a moderate oven for 40-45 minutes (180 degrees).

Serve with fresh cream or yoghurt.

PRUNE ‘N’ WALNUT PIE


Prunes and walnuts are both listed under nutritious category.Prunes especially,though

the health benefits are excellent,some do not like prunes (dried plums),so this recipe is a

good way to introduce into the diet.To endorse a few benefits of prunes  now

1. The content of fibre,sorbitol (a sugar alcohol that can loosen the stool) and a natural

laxative compound diphenyl isatain  are beneficial to the digestive tract.

2. The high soluble fibre helps to keep the sugar levels stable,as it delays the absorption

of  sugar into the blood stream.It also makes you feel full and satisfied after a meal,hence

overeating is avoided.

3.They help in lowering cholesterol,and improving bone health effectively.

Hope this outline is enough on the health note,and let’s move on to the awesome recipe.!

Ingredients for the basic tart pastry (9-10″ pie)

2 cups flour

120 gm butter

1 egg yolk

2 tblsp.sugar

1/4 tsp.salt

1/2 tsp.vanilla essence

Method

Mix all these ingredients and bind to a soft dough.Keep covered for 30-35 minutes.Do not

knead too much,but lightly put it together.If the dough is kneaded too much the pastry

will be tough.You can prepare this the previous day,and keep covered in the

refridgerator,and use it when needed.For this recipe,you could prick the base of the

pastry, and directly pour the filling,without prebaking the pastry .

For the filling

18-20 prunes

100 gm butter

2 eggs

1/2 tsp vanilla

50-75 gm walnuts

3/4 cup sugar

1/2 cup milk

1 cup flour

1 tsp baking powder

1/2 cup rum,or grape juice (lightly heated to soak)

Method

Heat the grape juice lightly and soak the prunes for a few hours or overnight for a richer

taste.If using rum or any other liquor you needn’t heat .Remove the prunes from the

juice(do not discard the juice) and arrange on the pricked and unbaked pastry.

Cream the butter and sugar till creamy.Add one egg at a time ,beating well after each

addition.Sift flour and baking powder,and add to the mixture.Add the rest of the

ingredients,with the rum or grape juice.(it should be of a dropping consistency.)

Pour the mixture over the prunes,and bake in a moderate oven for 45 minutes,or untill

done.Serve warm or cold with cream or a blob of ice cream.

BAKED BANANA CHEESE CAKE


Baked banana cheese cake is a lovely dessert for banana lovers.I have not added any topping

but you could add any type of topping to it ,to match the banana taste.Toppings like caramel

syrup,chocolate syrup, orange/lemon syrup or ganache are really good.You could also serve it

with ice-cream or fresh cream .The same banana filling (excluding cheese cake ing.)can be

used to make banana sponge cake,with fresh cream or chocolate,or caramel icings.

So now for the recipe.

INGREDIENTS

For the banana filling

4 tblsp.sugar

4 tblsp rum/sherry/brandy

4 tblsp.orange juice

4-5 bananas (not tooo ripe)

Heat the sugar,sherry,orange juice .Add bananas and cook for 5 minutes and use as filling in

desserts

For the cheese cake ingredients

100 gm butter

150 gm cream cheese or homemade cottage cheese.

1 tblsp.grated orange /lemon rind

1/4 cup cream

3-4 eggs depending on the size.

75 gm sugar

100 gm flour

1 tsp.baking powder

juice of 1 orange/lemon

1/2 tsp vanilla

Method

Beat butter and sugar together till creamy.Add cheese,juice,rind and beat.Add egg one at a time

and beat well.Fold in flour,baking powder,and cream and mix well.

For the base.

1 cup digestive biscuits or any chocolate cookies crumbled .Mix in with 2 tblsp. butter and

press on the prepared spring form pan,to form a smooth layer.

Pour half of the prepared cream cheese mixture on the prepared base.Add the banana filling

and pour the remaining mixture on the top.Dark chocolate chips could be added on top to get a

marbled look,and enhanced taste.Serve after refridgeration or warm.It’s all in the individuals

taste.

APPLE AND GINGER PIE


I have posted apple tart and pies before with banana ,cranberies …..but this one is with

ginger and black raisins.So for the recipe now.

INGREDIENTS

For the pastry

100 gms butter

2 cups flour

1 egg

2-3 tblsp.sugar

pinch of salt

1/2 tsp.vanilla

a little milk

METHOD

Mix the salt ,flour and sugar in a bowl.Rub in butter and egg and blend well.Add vanilla

and milk if necessary.Do not knead the dough too  much,just put it together,otherwise the

pastry will not be light.Keep covered for thirty minutes.Roll between two sheets of butter

paper ,or dust flour lightly and roll.Grease a pie dish,and gently add the pastry and line the

dish .Prick the centre with a fork .Crumple a piece of butter paper,put on the lined pie

crust.Add some dry beans or uncooked rice and half bake it.Spoon the apple filling .Top

with remaining pastry strips .Brush with egg yolk and bake on medium heat 180 degrees

for 20-25 minutes.

Filling

3-4 apples  cored and cut into slices

1/4 cup ginger chips

1/4 cup black raisins

1 tsp.cinammon powder.

a pinch of salt.

1/2 cup brown sugar (demerera sugar)

2-3 tblsp.butter.

a few walnuts

METHOD

Heat butter ,sugar gently for two minutes.Add the apples and cook for 5 minutes.Add the

rest of the ingredients.Spoon the mix into the pie dish.Cover with strips of the pastry and

bake.To add the extra glaze you can brush with marmalade or apricot jam after baking.

Variation

If you need more volume to another version of apple pie ,add 3 eggs and 1/4 cup cream

and bake

Tip

When you are using a liquid filling apply egg white on the inner side of the

pastry,before filling

BANANA MERINGUE PIE


I would like to name it as Humble Banana  Pie. Why? Because no fresh cream or butter is used in this recipe.

Well, this came to  my mind ,when i was making banofee pie, with the cream and dulce de leche preparation which consumed a lot of time.

I always like to keep things simple,easy,healthy and of course scintillating to the taste buds.

Innovation should never be bulky on your belly and your flabs.That’s my concept.

So let’s get into the recipe now.

Ingredients

For the base

1 thin slice of sponge cake

syrup made with 2 tblsp.brown sugar and 1/4 cup water+2 tblsp brandy (optional)

(if using white sugar you can caramelise and then add water)

For the  butterscotch custard filling

3 ripe firm bananas sliced

2 tblsp.salted butter

3/4 cup brown sugar

2 cups milk

2 tblsp.cornflour

1/4 cup chocolate chips(optional)

Method

Heat the butter and sugar till the sugar melts,and you get a nice brown color.

Mix cornflour in half cup milk and keep aside.

Add the rest of the milk to the sugar mixture,and heat on a medium flame till no sugar

crystals are found.

Lower the flame and add the cornflour+ milk.Keep stirring as it will thicken quickly.

Keep cooking till you get a thick custard.Remove from fire.

Sprinkle some chocolate chips and leave without stirring.The chocolate will melt in this

heat and create a rippled look.

To assemble the layers.

Lay the slice of cake in the desired tray you chose.

Poke holes on the cake and drizzle  half the syrup on the cake.

Arrange the sliced bananas and pour the rest of the syrup on  the bananas.

Next pour the custard on the bananas and leave to set in the fridge till you prepare the  meringue.

For the meringue.

3 egg whites

3-4 tblsp white sugar

a pinch of salt

1 tsp.white vinegar

1/4 cup almond powdered

Method

Beat egg whites to a stiff froth with salt.(the reason of adding salt is to break the protein and get peaks quicker)

Now add the vinegar,and sugar and beat  till you see stiff peaks.

Stop beating ,  and fold in the almond flour.

Spread on the custard fully and bake in a very hot oven for 5-7 minutes or till you see the

top browning.(200 degrees)

Serve warm with caramel sauce or chocolate sauce if you like.

Eggless or vegan walnut brownies


Who doesn’t like brownies?No doubt all love it.There are many brownie variations that I have to share with but, today I’m giving you the recipe for vegan walnut brownies.

Ingredients
100 gms.melted butter/olive oil/vegetable oil
1 cup flour
1/2 cup cocoa powder
1 cup curd or yoghurt
3/4 cup sugar( brown or white) sugar free naturo 50 gms for sugar free cakes
1 tsp.vanilla essence
1/4 cup chocolate chips (optional)
1+1/2 tsp.baking powder
1+1/2 tsp.baking soda
100 gm walnuts chopped

Method
Beat the curd and sugar till sugar melts(lightly powdering the sugar will save time). Add the rest of the ingredients one by one and blend to get a silky chocolatey texture.(keep half of the walnuts to add on top).Pour into a greased mould.Top with reserved walnuts and bake in a moderate oven for 30-35 minutes. (180 degrees).

Date ‘n’ Walnut Banana Cake


This is also a quickie,if you have the ingredients at hand.Baked this in a bundt tin,and all loved it.The blend of the bananas dates, and the crunch of the walnuts is awesome.So let’s go to the recipe.

Ingredients
200 gm butter
125 gm.brown sugar(preferably)
3 eggs
225 gm flour
1+1/2 tsp.cinammon powder
4 tblsp.honey or thick caramel syrup
3 ripe bananas mashed
125 pitted and chopped dates
75-100 gm walnuts chopped
1 tsp baking powder
Method
Mix all the ingredients together, except the bananas and dates in a food processor or a cake beater.
Add the bananas, and dates and mix for another 1-2 minutes.
Pour into a greased bundt tin,and bake for 35-40 minutes or untill a  skewer inserted, and it comes out clean.
After its cool transfer to your serving tray and top with glaze or chocolate sauce.
For the glaze
4 tblsp.honey,3 tblsp butter,few walnuts
You could replace honey for sugar too.
Method
Heat these ingredients for 4-5 minutes and glaze the cake.

Apple ‘n’Cranberry Crumble Tart


Apple the wonder fruit known for its luscious looks,and health benefits is my    subject today.Apple is low in calories,and high with antioxidants,and when turned into a dessert it’s simply addictive.I don’t want to go deeper into the health side,so now for the recipe
Ingredients for the crust
1 cup flour
3 tblsp.butter
1 egg
1/4 cup sugar
Bind all these together to form a dough.If needed add milk or water.(I did not add water or milk)

For the filling
4-5 granny Smith apples or any apples (I tried using both red and green)
1/4 cup brown sugar
2 dried orange slices or 1 tblsp marmalade
1/2 tsp.lemon rind (grated)
2 tblsp lemon juice
1/2 tsp spice powder (cinammon,clove,cardamon)
a pinch of nutmeg powder
1/4 cup cranberries
a pinch of salt.
Core the apples and slice.(optional to peel).Mix all ingredients in a bowl and set aside.

For the topping
1/2 cup rolled oats
1/2 cup wheat flour
1/4 cup sugar(preferably brown)
4-5 tblsp butter.
Mix all together and use as topping.

Method
Roll the pastry,Line a greased tart tin.Add some beans or uncooked rice and bake (180 degrees)for 10 minutes. (This is done to prevent the bottom of the pastry from puffing up.)When it’s light brown, remove from the oven.Take the beans off the tart, and add the apple filling.Press the topping of the oat filling and return to oven for another 35 minutes.(180degrees)
Serve with fresh cream,cranberry sauce,or custard.
