PUMPKIN COTTAGE CHEESE CAKE


This is a very easy ,and one mix cheesecake.If the pumpkin mash is pre-cooked or

prebaked it will be an easy go..

For the recipe now.

INGREDIENTS

1 packet (200 gm)paneer or cottage cheese at room temperature

2-3 eggs

1 cup pumpkin mash

1/2 cup sour cream or yoghurt

1 cup brown sugar

2 tsp.cornflour

1/2 tsp nutmeg powder

3/4 tsp ginger powder

1/2 tsp.cinammon powder

a pinch of salt

For the crust (2 options)

1. 10-12 ginger biscuits,2 tblsp butter -blended together

2. 1 cup walnuts-1/4 cup honey,1 tblsp butter -blended together

METHOD

Prepare the crust first.Press on the pie dish or springform pan and set aside .

Put all the ingredients and blend in a mixer or processor till fine.

Pour over prepared crust and bake in a slow oven (160-170 degrees) for 45 minutes or 1

hour till it is set.You could add pumpkin seeds,water melon seeds,or walnuts while it is

baking,or add any topping of your choice like, chocolate ganache,caramelised nuts or

serve plain.You can serve it warm or cold.

To make the Pumpkin Mash

Peel and cut the pumpkin into cubes .Add 2-3 tblsp of brown sugar  with a stick of

cinammon and cook with 1/2 cup water till dry and cooked .You could cook in the

pressure cooker without water on a low flame for 2 whistles.Mash it and use in recipes.

GOOSEBERRY/AMLA PUDDING


This is a healthy dessert innovation,and sure treat for those who love the fruit.It is rich in vitamin C and loaded with nutrients and antioxidants.

This has the texture of a mousse and butterscotch pudding,and can be served with cream and roasted nuts.

INGREDIENTS

200-250 gm gooseberry or amla

100 gm sugar

4 egg yolks

4 egg whites

1 cup cream (whipped )

3 tsp.gelatine mixed in a little water.

METHOD

Cook the berries with sugar till soft.Deseed and grind into a fine pulp.

Beat the yolks,add cream and pulp and heat just till it’s warm.Add melted gelatine and remove from fire.

Beat egg whites to a stiff froth and fold into the amla mix and allow to set in the refrigerator.

Could be served with nuts,or chocolate drizzle.

As a variation this dessert can be used as filling for tarts too.

PEAR CHOCOLATE PUDDING


The title should have been pear upside down chocolate pudding.As it looked too long to

fit i had to use the snip tool.

It is an eggless dessert and an awesome treat for vegans.The soft pear is one of my

favourites ,as it works wonders when used in desserts and cakes.This time i mixed it

with red wine and it was rich,moist and extremely delicious.

INGREDIENTS

For the base

3-4 soft pear sliced

1 tsp.lime juice

3/4-1 cup red wine

1/2 cup brown sugar

a piece of cinnamon

For the cake 

115 gm flour

150 gm brown sugar

40 gm cocoa powder (8 tsp)

3/4 tsp coffee powder

3/4 tsp.baking soda

45 ml coconut oil

1 tsp.vinegar

180 ml hot water

a pinch of salt

flaked almonds to sprinkle on the top after baking (toasted almonds will be fine too)

METHOD 

Mix all the dry ingredients and wet ingredients separately ,and then mix together.

The water you pour should be compulsorily hot as this contributes to the rich dark color.

Grease a preferred cake tin.Mix the pear slices with the lime juice and arrange (you can

use halves of pear too without slicing)in tin.

Add wine,sugar, and cinnamon.Pour cake mix over the pear and bake in a moderate

oven (*preferably a water bath) for 35-40 mins .(180 degrees)

Cool and turn it upside down. Decorate with flaked almonds .It can be served warm with

cream,a blob of ice-cream if you like.

I like it plain …!

*A water bath – when the cake is baked in a tray of water inside the oven.

you can also a place a cup of water inside the oven if you are not able to use the bigger tray with water.

 

 

 

 

 

SOFT PEAR FRANGIPANE TART


This tart has a lovely taste coupled with the natural taste of pear.As the soft pear is

naturally soft ,you needn’t stew it beforehand.

Frangipane tart is a filling made with cream and almonds .The addition of fruit can be

your choice.Fruits like the normal pear and apple have to be stewed for 2-3 minutes and

then added to the making.Please do try ,and send in your suggestions .

Let’s move on to the recipe now..

INGREDIENTS (for the pastry)

1.5 cups flour

1 egg yolk

1/4 cup sugar

a pinch of salt

1 tsp vanilla essence

100 gm (4 oz) butter

a little water to bind.

METHOD

Mix all the ingredients with minimal water (2-3 tblsp) to a soft dough .Cover and

refridgerate till you make the filling.

 

FILLING

INGREDIENTS

1.5 cups whole almonds ground fine

1/2 cup sugar

2 eggs (use the left over white too from the pastry)

1 tsp.vanilla essence

1/4 tsp.almond essence

1 tblsp marmalade or grated lemon or orange zest.

2 tblsp jam (any yellow color based jam ,like papaw,apricot,pineapple,mango)

2 -3 sliced soft pear (do not peel ,only remove the seeds)

METHOD

Mix all the ingredients together well and set aside.

Final step.

Roll the dough and put on a tart or pie dish.Prick the base with a fork and bake in a

moderate oven  for 10 minutes (180 degrees).

Remove from oven and pour the filling into the baked pastry.Lay the pear slices ,and

bake in a moderate oven for 25 minutes (180 degrees)

 

 

SWEET POTATO TART


Sweet potatoes known for its high dietary fibre with amassed health benefits have to be

compulsorily included often in your diet.

Not only the root even the leaves of the potato plant is beneficial to diabetic,heart,cancer

patients ,if taken raw as a juice ,or steamed .

Today’s subject is the potato made sweeter.Yes..! the recipe is for sweet potato meringue

tart.

INGREDIENTS

For the base

(you can use pie crust or a base with digestive biscuits.Well,i made it with walnuts and digestive biscuits)

1 cup digestive biscuit crumbled

1/2 cup walnuts

2 tblsp butter

Crush all these together and press on a pie dish.

For the filling

2 cups boiled or steamed sweet potato (skin removed and slightly mashed)

100 gm butter (room temperature)

2 eggs

a pinch of salt

1/2 cup sugar

1/2 cup milk powder/1/2 cup evaporated milk

1/2 tsp.cinammon powder

1/2 tsp.nutmeg powder

2 tsp.vanilla essence

Method

Blend all in a food processor or mixer till no lumps are seen.

Pour over the prepared base and bake in a moderate oven (180 degrees ) for 30 -35

minutes .

For the meringue.

2 egg whites

1 tblsp sugar

a pinch of cream of tartar(1/2 tsp. lime juice or white vinegar may be substituted)

Method

Beat egg whites to a stiff froth with cream of tartar .Fold in the sugar .Spread over the

baked filling ,and keep in a hot oven (200 degrees )for 10 minutes.

Open the door of the oven and allow to cool for 15-20 minutes .

Can be served plain or with any cream you prefer.

 

CHILLED COCONUT MILK CHEESE CAKE


This is low calorie cheesecake with no fresh cream.The topping I used was blackberry

topping,and I baked only the crust for 15 minutes.The rest of the method is ‘No Bake’.It’s easy

to make if the ingredients are at room temperature.

As gelatine is used as a setting agent,the exclusion of fresh cream did not make much of a

difference.Use thick coconut milk .(coconut milk cartons or tins can be used).

The sugar I used was brown sugar.(no white sugar).

The toppings can be innovated to match the coconut milk taste.

So let’s get into the recipe now.

INGREDIENTS

1 cup digestive biscuits/cracker crumbs

2 tblsp.sugar

50 gm butter

Mix all the ingredients ,and press onto a pie dish or spring form mould,and bake for 15 minutes.Keep in fridge till you prepare filling.

For the filling

1 cup cream cheese or cottage cheese

1 cup coconut milk (thick)

1 cup brown sugar

3 tsp.gelatine soaked in 1/4 cup water

1/2 cup milk

1/2 tsp.vanilla essence

3 eggs

Grated rind and juice of 1 lemon.

Separate the egg yolks and the whites.

Beat the yolks and half of the sugar.

Warm the milk ,and add to the beaten eggs cook on a low flame till thick.

Remove from fire.Add gelatine mixture and stir till gelatine dissolves.

Allow to cool.

Beat cheese with the remaining sugar,coconut milk essence,lemon rind and juice.

Whip up the egg whites separately in another bowl till stiff and gradually mix in the cheese

mixture.

Pour over prepared base,and allow to set in the fridge till set.

For the topping

1 cup blackberries/ or any berries you like( coarsely puréed)

Sugar or honey (according to your taste)

1-2 tsp.lime juice

1 tblsp cornflour

A little water

Cook all this till sugar melts and top the cheesecake once it is set.

CARAMELISED APPLE UPSIDE DOWN CAKE


This is an amazing dessert you should definitely try !The soft caramelised apples,is really

divine.

You can serve with ice-cream,or cream.It was excellent served plain.To serve with ice-

cream or cream is your choice.

You can use any type of apples for this recipe.I have used the Granny Smith apples ..

So ..let’s dive in to the recipe now…

INGREDIENTS

2 apples cored,peeled , sliced or quartered

1 tsp cinnamon powder

3/4 cup brown sugar

1 tblsp butter

1 cup castor sugar / brown sugar

2 egg whites

2 egg yolks

1/4 cup milk mixed with 1 tsp vinegar,or yoghurt

1/2 tsp grated lemon zest

1 tsp vanilla essence

1 heaped cup flour (120 gm)

1/2 tsp.baking powder

METHOD

Caramelise the (3/4 cup) sugar by heating without water,in the pan you are going to make the

cake.

Heat on a low flame till it is of a nice golden color and sugar dissolved.Add butter and mix

carefully.Switch off the flame ,and arrange the apple slices with the cinnamon and lemon zest

sprinkled on top.

Now cook again till the apples are partially soft on a low flame.Remove from fire and set

aside.

For the cake

Beat the egg whites stiff and add 1 cup sugar gradually and beat.Alternatively add the egg

yolks and beat well till creamy.Add essence

Fold in the flour with the baking powder.

Pour over stewed apples and bake in a moderate oven for 30-35 minutes

You can add raisins and nuts in the cake if you like.Well…I added raisins.

Tip – Stem ginger or dried ginger chips can be added with raisins

Orange peel and ginger can be added to the cake

A mix of dried fruits and nuts .

CARAMEL ‘N’CHOCOLATE NO BAKE CHEESECAKE


Caramel and chocolate is a ‘wow’ combination in desserts.Whether it is a cake,pudding,

or ice-cream or any sweet,this combination is to drool for.Hope you all agree with me …

Anyway,let me get into the recipe now .The crust is the basic digestive biscuit crust.You can

opt for mixed nuts crust,or any biscuits of your choice.This cheesecake is caramel

based ,made with brown sugar.The topping is a gelatine based chocolate.

INGREDIENTS

For the crust

1 cup digestive biscuits

25 gm butter

2 tblsp.sugar (brown or white)

Mix all the ingredients in a processor,and press on a spring form pan or pie dish evenly.Cover

and put into the fridge till you prepare the filling.

Option -You can bake this crust for 15 minutes,if you like.

For the filling

200gm cream cheese or cottage cheese (room temperature)

100 gm brown sugar

1 sachet gelatine (4 tsps)

1/4 cup water

1/2 cup thick warm milk

1/2 tsp vanilla/ caramel essence

1 cup cream ( lightly whipped)

3 egg yolks

3 egg whites

Method

Soak the gelatine in 1/4 cup water .Allow it to bloom.

Beat egg yolks and the sugar,and milk and cook on a low flame till slightly thick.

Melt the gelatine over a cup of boiling water,and pour the gelatine into the egg yolk

mixture,and heat till gelatine melts on a low flame.

Beat the cream cheese till it’s creamy .

Mix in the whipped cream,and the egg yolk mixture.

Beat egg whites stiff and to cream cheese mixture.

Pour into prepared crust and chill in fridge till set

For the topping

100 gm dark /milk chocolate

2 tsp gelatine

1/4 cup hot water

1/4 cup cream

Heat cream and chocolate in a Bain Marie (double boiler).

Mix gelatine in hot water till no granules are seen.

Mix into the chocolate mix,and mix well.

When well blended pour over set cheese cake and chill.

Decorate with nuts or chocolate.

Note: Always cover the cheesecake pan bottom with a cling film or foil to avoid liquid seeping out.

BAKED APRICOT CHEESECAKE PIE


Apricots is a good source of Vitamin A,and a treasure for antioxidants.Rich in fibre,good for

your heart,bones and eyes.As it has essential heart health nutrients,it is considered as a

superfood.I have used dry apricots in this recipe.You can used fresh apricots and stew ,or

use canned apricots too.

Let’s get into the recipe now..

INGREDIENTS

For the crust / base

1+1/4 cup flour

75 gm butter

1/4 cup sugar

1/2 cup ground almond flour.

1 egg yolk

a pinch of salt

1/4 cup apricot purée (5-6 apricots boiled with a little sugar or honey and puréed)/jam

Method

Knead or process all the ingredients together to just hold as a dough together,and don’t knead

too much.If it is too dry add 1-2 tblsp of ice water .Wrap it in polythene or foil and keep in the

fridge for minimum 15 minutes.Roll out onto the greased pie dish,or just press on using the

back of a glass or a spatula neat and even .Prick the base with a fork and bake for 10 minutes

(180 degrees).

For the filling

250gm cream cheese /home made paneer

2 eggs

1 egg yolk

1 tblsp.cornflour

3/4 cup sugar

1 cup chopped apricots

1/4 cup apricot purée (5-6 apricots boiled with a little sugar or honey and puréed) or apricot

jam

Method

Beat the cheese till soft.Add sugar and eggs and beat well.Add cornflour and beat again for a

few seconds .

Spread the jam on the baked pie crust and pour the beaten batter.Add the chopped apricots

and bake in a moderate oven for 40-45 minutes (180 degrees).

Serve with fresh cream or yoghurt.

PRUNE ‘N’ WALNUT PIE


Prunes and walnuts are both listed under nutritious category.Prunes especially,though

the health benefits are excellent,some do not like prunes (dried plums),so this recipe is a

good way to introduce into the diet.To endorse a few benefits of prunes  now

1. The content of fibre,sorbitol (a sugar alcohol that can loosen the stool) and a natural

laxative compound diphenyl isatain  are beneficial to the digestive tract.

2. The high soluble fibre helps to keep the sugar levels stable,as it delays the absorption

of  sugar into the blood stream.It also makes you feel full and satisfied after a meal,hence

overeating is avoided.

3.They help in lowering cholesterol,and improving bone health effectively.

Ingredients for the basic tart pastry (9-10″ pie)

2 cups flour

120 gm butter

1 egg yolk

2 tblsp.sugar

1/4 tsp.salt

1/2 tsp.vanilla essence

Method

Mix all these ingredients and bind to a soft dough.Keep covered for 30-35 minutes.Do not

knead too much,but lightly put it together.If the dough is kneaded too much the pastry

will be tough.You can prepare this the previous day,and keep covered in the

refridgerator,and use it when needed.For this recipe,you could prick the base of the

pastry, and directly pour the filling,without prebaking the pastry .

For the filling

18-20 prunes

100 gm butter

2 eggs

1/2 tsp vanilla

50-75 gm walnuts

3/4 cup sugar

1/2 cup milk

1 cup flour

1 tsp baking powder

1/2 cup rum,or grape juice (lightly heated to soak)

Method

Heat the grape juice lightly and soak the prunes for a few hours or overnight for a richer

taste.If using rum or any other liquor you needn’t heat .Remove the prunes from the

juice(do not discard the juice) and arrange on the pricked and unbaked pastry.

Cream the butter and sugar till creamy.Add one egg at a time ,beating well after each

addition.Sift flour and baking powder,and add to the mixture.Add the rest of the

ingredients,with the rum or grape juice.(it should be of a dropping consistency.)

Pour the mixture over the prunes,and bake in a moderate oven for 45 minutes,or untill

done.Serve warm or cold with cream or a blob of ice cream.
