Eggless or vegan walnut brownies


Who doesn’t like brownies?No doubt all love it.There are many brownie variations that I have to share with but, today I’m giving you the recipe for vegan walnut brownies.

Ingredients
100 gms.melted butter/olive oil/vegetable oil
1 cup flour
1/2 cup cocoa powder
1 cup curd or yoghurt
3/4 cup sugar( brown or white) sugar free naturo 50 gms for sugar free cakes
1 tsp.vanilla essence
1/4 cup chocolate chips (optional)
1+1/2 tsp.baking powder
1+1/2 tsp.baking soda
100 gm walnuts chopped

Method
Beat the curd and sugar till sugar melts(lightly powdering the sugar will save time). Add the rest of the ingredients one by one and blend to get a silky chocolatey texture.(keep half of the walnuts to add on top).Pour into a greased mould.Top with reserved walnuts and bake in a moderate oven for 30-35 minutes. (180 degrees).

Date ‘n’ Walnut Banana Cake


This is also a quickie,if you have the ingredients at hand.Baked this in a bundt tin,and all loved it.The blend of the bananas dates, and the crunch of the walnuts is awesome.So let’s go to the recipe.

Ingredients
200 gm butter
125 gm.brown sugar(preferably)
3 eggs
225 gm flour
1+1/2 tsp.cinammon powder
4 tblsp.honey or thick caramel syrup
3 ripe bananas mashed
125 pitted and chopped dates
75-100 gm walnuts chopped
1 tsp baking powder
Method
Mix all the ingredients together, except the bananas and dates in a food processor or a cake beater.
Add the bananas, and dates and mix for another 1-2 minutes.
Pour into a greased bundt tin,and bake for 35-40 minutes or untill a  skewer inserted, and it comes out clean.
After its cool transfer to your serving tray and top with glaze or chocolate sauce.
For the glaze
4 tblsp.honey,3 tblsp butter,few walnuts
You could replace honey for sugar too.
Method
Heat these ingredients for 4-5 minutes and glaze the cake.

Apple ‘n’Cranberry Crumble Tart


Apple the wonder fruit known for its luscious looks,and health benefits is my    subject today.Apple is low in calories,and high with antioxidants,and when turned into a dessert it’s simply addictive.I don’t want to go deeper into the health side,so now for the recipe
Ingredients for the crust
1 cup flour
3 tblsp.butter
1 egg
1/4 cup sugar
Bind all these together to form a dough.If needed add milk or water.(I did not add water or milk)

For the filling
4-5 granny Smith apples or any apples (I tried using both red and green)
1/4 cup brown sugar
2 dried orange slices or 1 tblsp marmalade
1/2 tsp.lemon rind (grated)
2 tblsp lemon juice
1/2 tsp spice powder (cinammon,clove,cardamon)
a pinch of nutmeg powder
1/4 cup cranberries
a pinch of salt.
Core the apples and slice.(optional to peel).Mix all ingredients in a bowl and set aside.

For the topping
1/2 cup rolled oats
1/2 cup wheat flour
1/4 cup sugar(preferably brown)
4-5 tblsp butter.
Mix all together and use as topping.

Method
Roll the pastry,Line a greased tart tin.Add some beans or uncooked rice and bake (180 degrees)for 10 minutes. (This is done to prevent the bottom of the pastry from puffing up.)When it’s light brown, remove from the oven.Take the beans off the tart, and add the apple filling.Press the topping of the oat filling and return to oven for another 35 minutes.(180degrees)
Serve with fresh cream,cranberry sauce,or custard.

Triple Chocolate Fudge Brownies(Flourless)


This is a very moist Brownie to be served with ice cream or chocolate sauce.
My suggestion for a variation
Chocolate mousse, coffee mousse,mocha mousse,vanilla mousse,pista mousse,or any of your favourite mousse,layered on top of this brownie,and dusted with chocolate powder,and chilled will be an excellent dessert.
For the ingredients
175 gm.butter
100 gm.dark chocolate
4 eggs
3/4 cup yoghurt /curd
1/2 cup cocoa powder
75 gm brown sugar
100 gm sugar
3 tblsp honey
1 tsp.instant coffee
125 gm chocolate chips(dark/milk)
125 gm.nuts(hazelnuts and walnuts coarsely chopped)
a pinch of salt.
1 tsp.vanilla essence
Method
Melt the butter,dark chocolate, the sugars, honey and instant coffee over a pan of boiling water,untill sugar is dissolved.Allow to cool.
Beat the eggs with salt and essence,gradually add the chocolate mix.Add the chopped nuts and chocolate chips,and mix lightly.
Pour into a greased dish and bake in a moderate oven for 30 minutes. You can refrigerate and cut into desired shapes.

Chicken cheesecake


Today I thought i’d turn a sweet dish to a savoury and succeeded.Got five star ratings from my judges none other than my kids..the best critics ever!
I made a sauce for the topping with the remaining chicken stock.Seems a healthy recipe and easy too.
Now for the recipe
Ingredients
150-200 gms boiled chicken (keep a little stock)
4 eggs
150-200gm cottage cheese/cream cheese
1 tblsp.ground pepper
2 tblsp.pickled capers
A few cranberries
1/2 cup fresh cream
I tblsp honey
Salt to taste
1/4 cup chopped coriander /spring onions
1/2 tsp thyme or rosemary
2-3 finely chopped green chillies
1 tsp.cummin seed powder
A pinch of nutmeg

For the base :I used 2 spring roll sheets.You could use lasagne sheets.
Graham cracker crumbs with melted butter is also a good base.

Method:Grease a springform pan.Dip the springroll sheets in water for a minute and put it on the base.
Use a food processor or any blender and mix all the ingredients.Pour over base, and bake in a moderate oven for 30-35 minutes (180degrees).Remove and drizzle with lemon and mustard sauce.
For the sauce
1 cup chicken stock
1 lemon
1 tblsp.cornflour
1/2 tsp.mustard
Salt to taste.
3-4 tblsp cream
Mix the cornflour with a little stock and keep aside.Heat the stock,add the cornflour,and when it becomes thick add the lemon juice and mustard.
Salt to taste.
Drizzle over the cheesecake, or serve separately.

Queen Pudding


This base of the pudding is like bread pudding,topped with jam and meringue.The quality and taste of the jam is vital in this dessert.
2 cups bread pieces
2 cups milk
2 eggs
Grated lemon rind
2 ounces sugar (50 gm)-keep 2 tblsp.separately to make meringue)
1/2 cup strawberry jam
a pinch of salt.
1/2 tsp.vanilla essence.
A pinch of nutmeg
1/2 tsp cornflour
1/4 tsp.white wine/rice wine vinegar or lime juice.

Heat milk with the sugar,and pour over the cut bread.Allow to soak for a few minutes,with the rind.Set aside the whites of eggs in a clean dry bowl. Beat the yolks,add to bread mixture,with vanilla and nutmeg. Grease a dish well with butter.Add the bread mixture and bake in a moderate oven(180 degrees) for 20 minutes.Remove from oven. Spread jam evenly.Beat the whites with a pinch of salt till stiff.Add the 2 tblsp.sugar
which was set aside,with 1/4 tsp wine vinegar or lime and half tsp.cornflour .Beat till stiff,and pipe over or spread over the jam,and place in oven again till the meringue is light brown.Allow to be in  oven for 10 minutes, after switching off the oven.
Can be served warm or cold.

Dhabba Gost Fusion(meat savoury pudding)


This is a bohra recipe which I tried with my version,of Chinese and Asian.Anyway for people who don’t know what bora means.Bohra is a Muslim community name.
So now let’s go to the recipe
450 gms.of boneless mutton(boiled and cut into tiny pieces)
1 tablespoon of flour
1 tablespoon ginger strips
1tsp.ginger garlic paste
1 capsicum ground
10-12 broken cashews
1 onion cut fine
1/2 tsp.garam masala
1/2 tsp.pepper corns
A pinch of nutmeg
1 green chilli cut fine
6 eggs
1/2 cup Parmesan cheese
I cup cooked macaroni or cooked rice.
Salt to taste
6 medium bowls or ramekins.
6 tsp.ghee or butter(to use for the final step)
1-2 tblsp.Oil or butter
Heat 1-2 tblsp.oil or butter in a pan,add flour and stir well taking care not to brown.Add the ginger-garlic paste,cut onions,the boiled meat,ground capsico and the rest of the spices.cook till well blended.Add grated cheese.
Fill the cups with the meat mixture.Place a sliced tomato on the mixture of each ramekin.Break egg on the tomato.Heat one tsp ghee till very hot and pour over the egg.The egg will cook in the heat of the ghee.
Note.One egg for each ramekin mix.
Serve hot.
My suggestions.1.you could substitute, prawn for meat.
2.Combination of prawn and squid.
3.Chicken and mushrooms.
