APPLE CAKE


Another lockdown cake with country sugar .

I have posted many recipes with apple , but this

one is lighter on your tummy !

I found this recipe on the internet, and made

changes as usual.

This has a frosting which has to be baked , after

baking the cake.

Apples are always well suited for desserts,and

here’s to another yummy apple dessert.

You can serve this with cream or ice cream,

with the lockdown wave,having it plain is also

excellent . Best served warm!

INGREDIENTS

2-3 apples ( Granny Smith/red)peeled cored and

cut

3/4 cup sugar

1 cup flour

2 eggs

1/4 tsp nutmeg powder

1/4 tsp cinnamon powder

1/2 cup milk

1/4 cup oil

A pinch of salt

2 tsp baking powder

METHOD

Mix the wet and dry ingredients,in separate

bowls.

Now mix both together, and pour into a cake

tray .

Arrange the cut apples on the top ,and bake in

a 170C oven for 20-25 minutes.

Remove from oven .

Pour the prepared frosting on the baked cake,

and return to oven for another 15 minutes.

For the frosting

1 egg

80 gm butter (melted)

100 gm sugar

Lemon zest 1 /2 tsp

Mix all ingredients together well , and pour

over cake and bake for 15 minutes.

CHOCO-CARAMEL PUDDING


This dessert was a failure turned success!

As Ken Robinson quotes’If you are not

prepared to be wrong,you’ll never come up

with anything original’.

My idea was choco-caramel molten cake .

My baking time was correct , but I forgot to

take the cake out , and the rest you know .

The syrupy texture settled at the bottom, and

the moist texture added to the flavour.

I used country sugar ( nattu sakarai) unrefined

sugar.

The taste was excellent. You could use

muscovado sugar / soft brown sugar too.

Trust me , all loved the taste . I too loved it very

much .

(The photo shows the unmoulded pieces and one in the cup itself .)

You could serve with cream/ ice cream.

To my original recipe now…..

INGREDIENTS

75 gm butter

3/4 cup sugar

3 eggs +1 yolk

1 tblsp cocoa powder

50 gm all purpose flour

1 tblsp thick curd

1/4 tsp baking powder

1/2 tsp vanilla essence ( optional)

METHOD

Melt the sugar and butter on a double boiler.

Remove from fire ,and add cocoa powder.

After it is slightly cool, add the flour and baking

powder.Add essence.

Beat eggs till frothy and mix in to the batter.

Butter the ramekins and dust with sugar ( for

easy removal)

Pour the batter into the ramekins, and bake in

a hot oven ( 200 degrees) for 12 minutes.

Remove from oven, and unmould if you like.

DATE ‘N’ CHOCOLATE JAGGERY CAKE


This cake was made without sugar.Even the icing was sugarless.Tasted good.

I used  powdered jaggery for the cake,and for the icing I used coconut sugar .This can be

made eggless too .I will be giving a follow up recipe below, for eggless.

This cake tastes still  better ,after 1-2 days.So, do try and send in your suggestions

So let’s get into the recipe.

INGREDIENTS

2 cups seedless dates soaked overnight in 1 cup boiling water.

1 cup jaggery powder or brown sugar

1/2 cup oil (olive oil/vegetable oil)

2 cups flour

2 eggs

3/4 tsp. baking soda

1 tsp.baking powder

1 tsp allspice powder

1/2 cup baking powder

1 tblsp yoghurt/curd

few walnuts

METHOD

I  used the mixer for mixing all ingredients except flour and nuts.

First blend the dates to a coarse paste,add the chocolate powder,yoghurt,oil, allspice

powder and eggs and  blend for 5 minutes.

Mix the flour,baking powder,baking soda,together and fold into the date mixture till well

corporated.

Pour the batter into a  greased tray and bake in a moderate oven for 30 minutes or untill

done.

For the icing

100 gm chocolate

1/4 cup cream

1/2 -3/4 cup jaggery/coconut sugar.(treacle can be used too)

Melt all in a double boiler and when the mix is silky ,poke holes with a skewer on the

cake and pour over the cake.

No refridgeration required to store.

For eggless cake

The same ingredients as above.Add 1/2 cup curd or yoghurt substituting egg.

 

 

ALMOND COCONUT SUGAR CAKE


This is a simple and easy recipe,but tastes awesome.

I have made this cake with almond flour,and a few teaspoons of white flour.

You could make this with pure almond flour too.

Coconut sugar was used for sweetness.

Coconut sugar considered to be low on calories( in comparison to the sugars we use )

naturally extracted from the sap of the coconut flower is being substituted for sweetness

nowadays.Though research is not proven fully ,it is said diabetics could opt for this sugar

( diabetics please do find out from your doctor).

Well,my try was really successful,as the cake tray was empty within minutes ,relieving

me of the hassle of transferring into a container.

INGREDIENTS

100 gm butter

2 eggs

1 cup coconut sugar

1 cup almond flour ( grind 1 cup almonds fine)

1/4 cup flour

1/4 tsp baking soda

1 tsp vanilla essence

a pinch of salt

METHOD

Cream the butter and sugar together

Add in the eggs and beat well.

Fold in the rest of the ingredients and mix well.

Transfer batter into a greased tray and bake for 25-30 minutes (170 degrees).

 

HONEY WALNUT BROWNIE


This is a no sugar brownie,and made

with only honey.

The taste and texture is nothing less

than the ones made with sugar.

So weight watchers,and health

watchers do try and let me know your

comments.

INGREDIENTS

100 gm butter

2 tblsp cocoa powder

1 cup honey

2 eggs

100 gm (1 heaped cup )flour

1 tsp vanilla essence

1/2 tsp baking powder

1 tblsp.curd/yoghurt

Handful of walnuts

METHOD

Melt butter and cocoa powder on a

very low flame till butter melts

lightly .Remove from fire and mix

well and set aside.

Separate the whites from the yolks.

Beat the whites till stiff and set

aside.

Add the yolks to the cocoa mixture

and beat well with curd and essence.

Sift flour and baking powder together

and fold into the cocoa mixture with

stiffly beaten egg whites.

Pour the honey finally and mix in till

well corporated with walnuts.

Transfer to a lined or greased panand

bake for 15 minutes for 180 degrees.

Lower the flame to 170 and bake for

another 15 minutes or till done.

You could drizzle with chocolate if

you like.

COCONUT FRUIT CAKE


After posting many savoury dishes for the past

few days,I thought to post something sweet and

baked.

This cake is butter free,and sugar free ,made

with fruits and nuts.

For the addition of sweet,only jaggery is used.

It is an easy,rich coconut fruit cake.

To endorse further this is a cake made mostly 

in Sri Lanka and called ‘POL CAKE.’

Some make it with treacle or jaggery mainly

theKitul jaggery which is widely available in Sri

Lanka.

The normal jaggery not the vellam ,but

karupatti which is the darker jaggery could be

used.

Brown sugar or demerara sugar can be made

into a syrup and used.

This is an absolute tasty moist cake,so do try

this recipe and post in your feedback.

So, let me share the recipe with you now.

INGREDIENTS

3 cups coconut grated/scraped

1 cup jaggery made into a syrup using a

little water /3/4 cup treacle (coconut treacle

or plain treacle)

200 gm flour

1.5 tsp baking powder

4 eggs.

Mixed spice 1/2 tsp.

1tsp vanilla essence

1/4 tsp grated nutmeg

150 gm dates

100 gm cashewnuts

100 gm cherries

100 gm raisins

50 gm ginger chips

100 gm pumpkin preserve (optional)

50 gm tutti frutti

A pinch of salt

METHOD

•First make the syrup with jaggery or sugar and

mix in the coconut.Set aside.

•Beat the egg whites stiff with salt, and add the yolks and beat well.

•Sift flour with the baking powder and just

sprinkle a little over the nuts(this prevents the

fruits from sinking to the bottom).

•Gradually mix in the coconut ,the mixed fruits

and nuts and the rest of the ingredients .

• Bake in a moderate oven (180 degrees) for

30-35 minutes or till done.

 NOTE :For a richer taste fruits can be soaked

overnight in rum or Brandy

Another variation :Soak the dates in tea or

coffee decoction and use.

HONEY DATE BARS


Another Treat for # sugar free lovers………..

Ingredients

75 gm flour

100 gm dates

50gm chopped nuts

2 eggs

4-5 tblsp. honey

1/4 tsp.baking powder

pinch of salt

50 gm melted margarine or butter

a little icing sugar for sprinkling

Sieve together the flour,baking powder and salt.Mix in the chopped dates and nuts.Blend together the fat eggs and honey.Add the dry ingredients and stir untill thoroughly combined.Pour into a well greased 8 inch tin and bake in a moderate oven (180 Degrees) untill golden color .Cut into bars and sprinkle icing sugar.Those who don’t like sugar can drizzle with honey.

HONEY CAKES


This cake is a good one for those who have a watch on their sugar levels,and those who follow strict diet rules.

Ingredients:

50 gm butter

100 gm flour(plain or wheat)

1 tsp.baking powder

1 tsp. powdered spice(cardamon,nutmeg,cloves)

1 tsp.ground ginger (dry/fresh)

1 tsp. sesame seeds(chia seeds/pumpkin seeds/flax seeds/poppy seeds could be used)

1-1 1/2 cup honey

1 egg beaten

1/4 cup milk

Rub fat into the flour and add all other ingredients.Add the baking powder dissolved in a milk.Add sufficient milk to get the desired consistency.Pour into  desired moulds and bake in a moderate (180 degrees) for 25- 30 minutes,if desired you could sprinkle some sugar on the top before baking.
