MORINGA RICE FLOUR ROTI


This is another version of the rice flour roti

recipe I have posted before,with moringa

leaves.

This roti can be made using red rice flour too.

Moringa emerging the star of herbs , has to be

included in your diet frequently.As I have a

moringa tree at my hands reach,I pluck

whenever it attracts me with its gleaming coin

like leaves. Nature’s gift to us .

So ..now to the recipe.

INGREDIENTS

500 gm rice flour

Moringa leaves

2-3 chilli flakes

1 cup grated coconut

1 egg ( optional)

1 tblsp ghee / butter ( optional)

Boiling hot water

Salt to taste

METHOD

Take half of the moringa leaves and pulse it in

a grinder for 1 second and set aside.

Take flour in a bowl, add salt and boiling water

gradually and mix with a spatula till it forms

together . Allow to cool for few minutes and

then add all the ingredients and mix to a soft

dough.

Divide portions and press on oiled sheets or on

the pan itself .No need to add oil . Just smear

the pan with a cloth dipped in oil. If it’s a non

stick pan , you can opt out the smearing.

Cook on both sides . Serve with curries of your

choice !

COCONUT ‘N’MORINGA ROTI


Moringa oleifera ,also known as the drumstick tree ,is a miracle tree , packed with

nutrients.Its leaves,bark,flowers,seeds,fruits,roots are mostly used in eastern countries in

various ways.It’s produce is beneficial to treat diabetic ,heart,liver ,arthritis and many

more.As it composes good amount of antioxidants,consuming this everyday gives good

results,also scavenging fat in your body.Moringa leaf juice is best for those on a diet too.

Well,let’s get into the recipe now.

INGREDIENTS

500 gm flour

1 coconut grated

coconut water(optional)

2 green chillies chopped fine

1-pips garlic chopped fine(optional)

1-2 cups moringa leaves

1 tsp.cummin seed powder

1/2 tsp pepper powder(optional)

salt to taste

a little coconut oil

METHOD

First slightly saute the moringa leaves in a tsp.of oil.Mix this with the rest of the

ingredients,with a little water and make a soft dough.

Apply oil on the board you are going to flatten the dough.Flatten the dough with your

palms.Apply oil on the griddle (do not pour oil) .Cook on both sides till crisp and serve hot

with any curry or chutney of your choice.

SRI LANKAN COCONUT ROTI WITH ONION SAMBOL


This is a Srilankan special dish which could be

made for breakfast or dinner.

INGREDIENTS

3 cups plain flour

1 coconut scraped (coconut can be cut and

ground coarsely with 1 cup water and  used )

salt to taste

METHOD

Bind all these to a slight sticky dough .

Divide portions out of the dough.

Grease a plate with coconut oil,flatten with the

palm of your hand.

Cook on a griddle till cooked on both sides.

Variations

1.  You could add chopped onions,green

chillies,and curry leaves when binding the

dough.

2.  Spring onions and chilli powder with

cumin seeds.

For the onion sambol

25 small onions /2 big onions

1-2 tbsp chilli flakes

juice of 1 lime

1/2 tsp pepper powder

1 garlic

few curry leaves

1 tbsp sugar

salt to taste.

Grinding this in a pestle and mortar way will

be excellent..or blend coarsely in a blender

quickly,otherwise it will become watery.
