This is another addition to my innovated


It’s akin to the ‘wattalapam’recipe, and the only

difference is the addition of ground almonds

and white poppy seeds paste.This tasted like a

creamy wattalapam.

One of my friends had a recipe with white

poppy seeds ground into a sugar watallapam.

So,this is where I got the idea to add khus khus

or white poppy seeds.Adding almonds was

purely my idea.So, that’s how this lovely

creamy dessert was created .

150 gm jaggery

50 gm brown sugar or plain sugar

6 eggs

20-25 almonds

1 tsp white poppy seeds ( optional)

A pinch of salt

1.5 cups thick coconut milk

1/2 tsp cardamon powder

1/4 tsp nutmeg powder

1 tsp vanilla essence


•Add the jaggery,sugar and half coconut milk

into a mixer jar and pulse till jaggery and

sugar are well blended.

•Strain the mixture .

•Grind the almonds and poppy seeds to a fine

paste,and set aside.

•Beat the eggs with the remaining coconut milk.

•Mix in the paste,and the rest of the


•Mix well and pour into a mould and steam for

30-40 minutes or till done .

•This can be baked in a bath in the oven too.


This is made with Earl Grey Tea infused milk .I made it still more flavourful with cardamon powder,and ginger powder.(like a malai tea )

This dessert is the same as a caramel pudding, only the flavour differs.You could steam or bake.If you have opted to

bake ,use the water-bath method.

To the recipe


2 cups milk

1/2 cup cream

5-6 eggs

6-7 tbsp sugar or to taste

1/2 cup water

2 tea bags

1 tsp cardamon powder

1/2 tsp dry ginger powder

For the caramel

2 -3 tbsp sugar

1 tbsp water


Boil water with the tea bags till you get a nice deep colour.

Add half cup milk and allow to reach one boil. Cover and allow to cool.

Beat eggs with sugar and flavouring .

Add milk and cream and beat well and set aside.

To caramelise

Heat the sugar and add water .

Cook till you get a nice golden brown colour.

Add the beaten egg mixture to the set caramel .

Steam / bake in a *water bath ( 35 minutes or till set).

First bake covered for 15 minutes .

Remove cover,and bake for another 20-25 minutes.

You could serve warm or cold.

*A water bath is to keep the prepared dish in a bigger dish containing water in the oven.



This is an easy pudding with a rich taste.With

treacle at the base,and the blend of rum has an

exquisite taste.As rum and treacle are used ,

essence is not required.

This can be steamed or baked in a bath.( in a

tray of water).

Note : Do not make with semolina bread .

2 cups milk

3 eggs

1/2 cup sugar

1/4 cup brandy / rum

A handful of raisins

4-5 slices buttered bread ( on one side)

2 tsp cocoa powder

A pinch of grated nutmeg

Treacle to line the pudding dish


First soak the raisins in the liquor for some

time. You can soak overnight too .

Beat eggs lightly and add to the milk with cocoa


Pour this mixture over the bread and allow to

soak for some time . You can break the bread

into pieces, and add too.Add the rest of the

ingredients and mix.

Now take the bowl you are going to steam the


Pour 3-4 tbsp of treacle,and swirl around.

Pour the prepared bread mixture, over the

treacle and steam covered till done .


The easiest dessert ever!Sugar or jaggery may

be used.

I’m not able to get sulphur free sugar due to the

lockdown.White refined sugar can never be

in my mind ,so trying my hand with country


It’s a simple dessert,but it’s like comfort food .

You can steam this on the top container of

your rice cooker ,while cooking your rice.

You could even bake this .

Now to the recipe


1 cup milk / coconut milk

5 eggs

1/4 cup sugar or to your taste

A little grated nutmeg

1/2 tsp cardamom powder

1/2 tsp vanilla essence ( optional)

a pinch of salt


Beat eggs with sugar .

Add milk with the rest of the ingredients.

Mix well . Pour into a bowl.

Cover and steam till firm.

You could add sliced cashews and raisins if you


Coconut pudding


This dessert can be made with thick fresh coconut milk or tinned coconut milk.It is classified mostly as an Asian dessert.(white watalappan).
For the recipe
1 tin coconut milk or 2 cups thick coconut milk.
1/2 cup white sugar /brown sugar.
8 eggs
1/4 tsp.cardamon powder
A pinch of nutmeg powder
1/2 tsp rose water.
Few cashewnuts and raisins.
Topping:(optional)-chocolate sauce.

Beat eggs and sugar together.Add in the coconut milk.Add the rest of the ingredients. Pour into desired mould and steam for 30 minutes.
serve warm or cold


6 oz.flour(1+1/2 cup)

8 oz.dates

4 oz.sugar

4 oz.butter

2 tsp.baking powder

2 tblsp.milk powder or 1/2 cup milk

2-3 eggs

a pinch of salt

Beat butter and sugar well.Chop dates and soak in hot water(if preferred light plain tea,or black

coffee).Beat in the eggs (one at a time).fold in the rest of the ingredients .Grease a mould ,pour the

mixture.Seal with foil,and steam for 1 hour.

Serve with cream,custard, hot chocolate sauce ,apple sauce or ice-cream.
