PALAK PANEER (SPINACH ‘N’ COTTAGE CHEESE)

This dish is also listed under iron rich.For those kids who dislike eating greens will surely love this with cottage cheese.Today I give you a little twist,from the basic Palak Paneer recipe.
Ingredients
200 gm of paneer/cottage cheese cubed
4-5 kashmiri chillies soaked for few minutes.
5-6 small onions/shallots
7-8 pips of garlic peeled
10 cashew/almonds(optional)
1 cup cut spinach leaves
1 tsp.cummin seeds
Small piece of cinammon
1 tsp.honey
a pinch of nutmeg powder
Butter or oil 1-2 tblsp.
1 small onion cut.
Salt to taste.
Heat oil and add spinach,garlic,small onions, cummin seeds and cashew and saute till raw smell disappears.Grind this with the soaked kashmiri chillies coarsely and set aside.In the same oil lightly fry cut onions with the cinammon,next add the cubed paneer and saute for another 2 minutes. Then add the ground mixture and cook for just 5-7 minutes. Lastly add salt,honey and nutmeg and simmer for 5 minutes.You can add water if you like the consistency, to be lighter.
Grated cheese can be added on top while serving.
Well suited for chappathis or anytime of rotis.

Beetroot halwa


Here I bring you a vegetable turning delicacy recipe.Firstly I would like to give a short note on the benefits of this root.Whether consumed as a juice,salad vegetable,or halwa,or cake(red velvet cake),it’s nutrients are full.Beetroot helps to lower blood pressure,bad cholesterol.The iron content is high,thus creating energy….and if I have to write about the benefits of this vegetable I have to write a long story..so let’s go to the recipe
Ingredients
3 beetroots finely grated
1+1/4 cup sugar
1/2 cup kova or half cup cream or milk
1/4 tsp.cardamon powder
Ghee 1/4 -1/2 cup
Sliced almonds/cashewnuts/watermelon seeds
a pinch of salt.
Heat half of the ghee in a heavy bottomed vessel,and cook the beetroot, till the raw smell disappears.Next add the kova or the milk and salt and cook till for a further 5 minutes or till well blended.Now add sugar,and keep stirring till thick.gradually add remaining ghee.Add cardamon powder n nuts n mix till the mixture leaves the sides of the pan.Put onto a greased plate and flatten with a little ghee on top to get the shiny look.Can be served warm.
Note:milk powder can be substituted for milk or kova.
